Ingredients:
- 3/4 cup Jif Creamy Peanut Butter (or Peanut Butter and Chocolate Flavored Spread)
- 1/2 cup butter, softened, or Crisco shortening
- 1 1/4 cups firmly packed light brown sugar
- 3 tablespoons milk
- 1 tablespoon vanilla extract (sometimes listed as 1 teaspoon in older variations)
- 1 large egg
- 1 3/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt (or 3/4 tsp kosher salt)
- Optional: Granulated sugar for rolling (for a classic sparkling top)
Instructions:
- Preheat oven to 375°F (190°C).
- Combine peanut butter, shortening or butter, brown sugar, milk, and vanilla in a large bowl and beat until blended. Add the egg and beat until just blended.
- In a separate bowl, combine flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just blended.
- Drop the dough by rounded tablespoonfuls onto a prepared baking sheet, spacing them 2 inches apart. Flatten each cookie slightly with a fork to create a crisscross pattern.
- Bake for 7 to 8 minutes, or up to 10 minutes for crispier cookies, until they are set and lightly browned.
- Allow the cookies to cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
